    Add the saltfish to the frying pan and dash some all purpose seasoning on it, along with a little paprika and stir on medium heat for 2 minutes. Strain the liquid from the ackee and add to the frying pan carefully. Dash a little pepper on top and gently fold the ackee and saltfish together. Then simmer for 5 minutes. Then done! Serves people.

    To make Ackee & Saltfish, cook the yellow fruit in water and then combine it with salt fish that has been cooked and flaked. The dish is then seasoned with, fresh herbs and black pepper or hot pepper or both to make a tasty entree that’s perfect any time of day.

    In a large frying, pan combine: oil, diced tomatoes, sliced onions, sprigs of thyme and all seasoning. Heat until simmering. Add saltfish. Do this by picking apart the fish with your hands into large pieces. Once combined and simmering, add drained can of ackee (spoon in sparingly as Ackee is very fragile and will break apart easily).

    Soak saltfish in water to remove some of the salt or boil in water for minutes. Clean the ackee. Remove the seeds and all traces of interior red pit from the ackees. Wash ackees five times; Cover and boil until moderately soft. Drain, cover, and put aside. Pick up (flake) the saltfish and remove all bones.

    Ackee and saltfish actually taste nothing like eggs. Ackee is a bland fruit that absorbs the flavors it’s cooked with, which leaves the saltiness of the cod, the mix of spices, a hint of tropical essence, and a textural contrast that excites me. Decades later, it’s still my favorite dish.

    Spread the prepared ackee and saltfish evenly. Roll up the dough and score. Chill till firm then slice into pinwheels. Bake! The pinwheels bakes for 12 to 15 minutes at F. That’s it! Like the spring rolls and ackee and saltfish on twice fried green plantains, this is a nice twist on a traditional dish.
